A Perfect Meal after a Great Workout!

I was hungry after a run and some laps in the pool! So.....I made myself a great fish dinner. No protein powder and carrots tonight! Who says you can't cook for one? Well...I used to say that.... but NOT ANYMORE! I deserve to have a great meal even if it's just for me! I always have some cooked brown rice in the fridge and I had some leftover coleslaw so it was so easy just to bake up some fish. I put some chili sauce with a little spray of olive oil on the fish and baked it for about 20 minutes. What a wonderful evening!

Gerry cooks up Ahi from Kauai!

Ahi from Hawaii, actually Kauai!

You're going to love this easy and exceptionally delicious meal! Make sure you buy sushi grade ahi (tuna) for best results. My link on the side will show you the wonderful hotel where we stayed. The name of the restaurant where Chef Ken works is called, "Tidepools" and is fabulous!

Seared Ahi Tuna

#2 (6-7 ounce) filets of Ahi

1 cup soy sauce

1/2 cup breadcrumbs

1 tablespoon brown sugar

1 tablespoon Montreal Steak Seasoning

Olive oil to coat pan for searing.

Soak Ahi in soy sauce for about an hour. Mix together breadcrumbs, brown sugar and steak seasoning. Use to liberally season the Ahi and grill to desired doneness.

Now make yourself a Mai Tai and pretend you're on the island!
